Australian Shiraz can be broadly divided into two groups- either warm or cool climate Shiraz . The former generally offers big ripe fruit driven styles with overt American oak, while their cool climate counterparts offer finesse with spicy complexity, fine grained tannins and natural acid balance.

The cool maritime climate of the Mornington Peninsula results in a long growing season which extends flavour ripening whilst maintaining natural acid balance. The 2004 vintage on the Mornington Peninsula was spectacular with unusually mild conditions. This led to Shiraz fruit with complex fruit and spice flavours.

Technical notes for 2005 Shiraz

Picked 20/4/05
All fruit destemmed into half tonne open fermenters with hand plunging 3 times daily.
Highest fermentation temperature 30˚C.
Malolactic fermentation and maturation in 1-3 year old American and French barriques. Aged in barrels for 10 months.

Tasting notes

Aroma: Ripe blackcurrants and vanilla with a hint of five spice.
Palate: Full bodied with lots of ripe berries and savory oak. A massive wall of supple tannins means that, whilst balanced and drinkable young, this wine can age up to 10 years.
